This winter salad is packed with fresh carrot, beetroot in a zesty orange and cayenne dressing.

This salad comes together in less than 20 minutes and requires no cooking. It is a great quick side salad to serve with your next meal, take to work for lunch or contribute to pot luck.


Ingredients

1 beetroot peeled and grated

1 carrot grated

1 lemon squeezed

1 tbsp sesame seeds (optional)

How it’s made

Mix both beetroot and carrot in a bowl, and toss through squeezed lemon. If adding sesame seeds, sprinkle them over the top

TIP: if you prefer it cooked, cover it and pop it in the microwave on high for two minutes.
