Creamy Tomato Soup

2 tbsp oil
·
1 onion, diced
·
2 carrots, diced
·
3 cloves garlic, minced
·
5 tomatoes, diced
·
8 fresh basil leaves
·
3 cups Vegetable stock
·
salt to taste
·
¼ tsp ground black pepper.
·
¾ cup unsweetened almond milk (optional )
Instructions
1.
Heat the oil in a
large, deep stock pot over medium heat.
2.
Add the onion and
carrots and sauté for 8-10 minutes, until tender.
3.
Add the garlic and
cook for 1 minute.
4.
Add the tomatoes, basil,
Vegetable stock, salt, and pepper and stir well.
5.
Bring the soup to a
boil, lower the heat, and simmer, uncovered, for 30 minutes, until the tomatoes
are very tender.
6.
Using a blender to blend until pureed.
7.
Return to the pot,
if applicable, and then add the almond milk and stir to combine.
8.
Add Season to taste.
